Thai Banana Spring Rolls

ingredients

Spring Roll Ingredients
4 Medium bananas
A little fresh lime/lemon juice
4 Spring Roll pastry sheets
A little water to seal the pastry

Sauce Ingredients
2 Tbs Brown caramel sugar
1/2 can or 120ml Condensed milk
50 ml Coconut milk
1ts Vanilla essence

directions
Seperate the spring roll pastry sheets and place them under a damp cloth. Put the water in a little bowl and squeeze the lime/lemon juice into a plate.
Peel one banana, coat with a little lime/lemon juice. Place on a single pastry sheet (accross one of the corners) then start rolling the pastry tightly, folding in the edges as you go along to form a uniform spring roll. Seal the last tip with a little water. Repeat with the other bananas and store in the refrigerator until needed.
When ready to serve. Heat enough oil in a pan to deep fry the spring rolls. Heat the sauce ingredients in a pan over low heat and stir until thickened (about 5-8minutes). When the oil is ready, deep fry the spring rolls till golden crispy.
Cut each spring roll in half (at an angle), place on a place and drizzle the warm sauce over it. Serve.

Even people who intensly dislike bananas or cooked bananas will like this... it has happened more than once :-)
Be careful with the sauce and the bananas, both of these hold heat very well.. best to let the spring rolls sit for a few minutes before serving them.
The coconut milk doesnt have to be included if you dont have any.

There are two essential side dishes that will make your Thai food extrodinary
1. A plate of fresh vegetables like cucumber, leafy vegetables, tomatoes, green beans etc, roughly chopped or whole so it can be taken with the hand - compliments the passionate flavours of the Thai food.
2. Prik Nam Bplaa - 3 chillies sliced into rings, 3 cloves of garlic sliced thinly, 1 shallot sliced into thin rings, 1/2 lime sliced into slivers and quatered. Divide these equally into two small sauce bowls, add a good glug of Fish sauce and 1/2 teaspoon of honey or sugar, stir to mix. Invite your guests to drizzle 1ts over their rice to flavor it before they start with any of the other dishes. |
